Day #86 - March 29, 2010 - Cancun day 5

Well, this was our last day in Cancun. We got up early, hoping to get some sun before we had to check out. We had breakfast, put our swimsuit on and laid by the pool for awhile, but it was too cloudy. So, we decided to take advantage of the last bit of all inclusive we had and had our last lunch on our room's balcony...

Then we hit up Margaritaville again in the Airport for una mas cerveza y margarita! :-P


We had a fabulous time and we were so sad to be leaving paradise. Today is mine and John's actual 2 year anniversary and I couldn't think of any better way to spend it. These past 2 years have been amazing and I thank God every day that we crossed each others paths 2 years ago.
I love you babe, Happy Anniversary!

I don't have very many pictures from this day because they are all on my underwater camera I need to get developed.
John got me the Xel-Ha excursion for Valentines Day, so Saturday we went and it was awesome. Despite the horrible adventure we had getting there, once we were there we had a blast. Here are few pictures from our day tubing, snorkeling, eating and drinking! :)




Day #83 - March 26, 2010 - Cancun day 2

Friday morning we got up early, had breakfast then made our way to the lawn chairs in front of the water. We spent most of the day doing this...

After way too long in the sun, we ventured out downtown, visited Carlos and Charlies, Senior Frogs and shopped at the Mexican Flea Market....

Even though I was miserably sunburnt, we still ventured out for dinner to Margaritaville...

Day #82 - March 25, 2010 - Cancun day 1

For these next few days while we were in Cancun, I'm going to post a few pictures because I took so many while we were there and I can't decide which ones I want to post!!
Thursday morning we arrived at our resort in Cancun. Our room wasn't ready yet, so they went ahead and put our all inclusive bracelets on us, took our bags and told us to go ahead and have lunch. This was our first meal in Cancun at the buffet in our resort. The waiter asked if we wanted him to take our picture so here it is...

We walked around the resort and finally checked into our room and found this view off of our balcony...


We put on our swimsuits, went to the beach and enjoyed the sun the rest of the day.

Day #81 - March 24, 2010 - Birthday celebrations continued


Wednesday night we went to John's parents to celebrate his birthday and this is a picture of him and his youngest sister with his birthday cake!

Day #80 - March 23rd, 2010 - The infamous rice cooker


Well, this was John's actual birthday and we were supposed to go have dinner at his parents house, but his mom got sick so we went Wednesday night instead. We ended up just going out for Escalante's and started packing for our trip! So, in honor of his birthday, I decided to take a picture of one of his favorite things, the rice cooker! haha

Day #79 - March 22, 2010 - Boyfriends birthday dinner!


March 23rd is John's actual birthday, but we went out with friends and celebrated Monday night at Taste of Texas. They treated us with this awesome cheesecake, sparkler and all!

Day #78 - March 21, 2010 - Chicken noodle soup


Ok, I'm not going to do a lot of explaining on these next few pictures because I am over a week behind on updating my pics! And, I want to get to the fun ones from CANCUN! :D
Anyway, this is our homemade chicken noodle soup we had for dinner last Sunday. It was awesome! It's even better as leftovers too! :-P

Day #77 - March 20, 2010 - New floors for us!


Saturday we went and picked our new floors and put the deposit down on them! They are supposed to call us on Monday to set up our appt to come and install them and hopefully within a couple of weeks we'll have new floors throughout our whole first floor! We're getting the wood (laminate) throughout the living room and the tile in the kitchen, breakfast area, and all the bathrooms. We're going with these small tiles in the bathrooms and 20x20 tiles in the kitchen. We can't wait! :D

Day #76 - March 19, 2010 - Friends, cars and basketball


Friday of Spring Break was spent having lunch with some of my girlfriends I hadn't seen in forever. We are all school nurses now so our schedules just don't allow us to see as often as we used to when we had days off during the week. But, since we were all out for Spring Break this week it was the perfect opportunity! I am so disappointed I didn't pull out my camera and take a picture with these girls and their cute little ones :) We spent most of the afternoon on the patio of Willy's enjoying margaritas and each others company. I can't wait to do it again.
After that, we went to pick up John's new car... well, new to him :) John has been wanting a 4-Runner for a long time so when one of our friends parents had theirs for sale, it worked out perfectly. John got a great deal on it and he is surely enjoying having the bigger car instead of his small Mazda! We will probably put his car up for sale here pretty soon and use the extra money we'll get from it to put towards the new floors I'll talk about in the next post! :) The rest of the evening was spent at Beck's Sportatorium watching the NCAA tournament and cheering for whichever teams we had picked for our brackets!

Day #75 - March 18, 2010 - A zebra purse


Well, I talked about my animal print obsession here and here. And, if you know me well, I have a thing for buying an overwhelming amount of bags, purses, handbags, etc. So, when I found this purse, it was love at first sight! Of course, I see zebra purses all over the place now, but there's only a few that can pull it off and be classy with it. The material on this is like a felt and not a cheap plastic like most of the zebra bags I've seen. So, it was a must buy! :)
Thursday of Spring Break was spent shopping (when I got this bag) with John's sister then to dinner for John's mom's birthday at our favorite gyro place. I spent way too much money at Old Navy, Gap, ATL, and NY&Co. Most of it was summer clothes and stuff for our upcoming vacation but I picked up a few things to wear to work as well. I think I am finished shopping for Spring for now! :)

Day #74 - March 17, 2010 - St. Paddy's Day


This was the extent of our St. Patrick's Day celebration and decoration. John stayed home from work sick on Wednesday so we didn't go out and do the green beer drinkin like we originally planned. It was a nice relaxing day at home... Even though John was sick, we got some good quality time together since I was home for Spring Break too! :)

Day #73 - March 16, 2010 - Kate Spade makes iPhone covers?


Yes, she does! And, yesterday when I went in to the Apple store hoping someone would be able to bring my iphone back to life, I found this beauty! I couldn't pass it up even though I hate to spend nearly $40 on a cover when I can buy them online for so much cheaper. It's a Kate Spade silicone cover and its turqoise with these stripes on the back. I love how changing the cover on a phone can make it seem like you got a whole new one!

Day #72 - March 15, 2010 - Another day at the rodeo!


Monday, my mom, sister and I headed back out the rodeo. This has unintentionally became a tradition of ours since I moved to Houston 5 years ago. It seems as though every year they come here to visit during Spring Break which happens to be the same time of year as the Rodeo so we always make a trip to Reliant Park. This year we got tickets to see Lady Antebellem and let me just say, they were amazing. They really put on a good show.
Anyway, my mom was trying to play photographer in this picture. She wanted a cute picture of the back of our boots. It turned out cute I think. Except for the unfortunate varicose veins I have. That's one of the many horrible things nursing does to your body! :-/

Day #71 - March 14, 2010 - Meet the parents

***I just realized my pictures are out of order and I have no idea how to fix it. It keeps uploading them wrong and won't copy and paste so I can move them around. So, they will stay out of order :)***

Well, Monday my iphone bit the dust! And guess what... my picture for Sunday was on the phone. Luckily the awesome guy from the Apple store was able to bring the phone back to life, but because I hadn't hooked it up to Itunes in awhile, I lost everything since then; including Sunday's picture. We had a very exciting day on Sunday, so I want to at least write about what happened! :)
My mom and sister came in town on Sunday morning to spend a couple of days with me because we were both out for Spring Break. When we found out they were coming a few weeks ago we invited John's family to come over Sunday night for dinner because they had never met. Well, the families have now finally met and it went amazingly well! I wasn't really worried about it, but I was still semi anxious. John picked up fajitas and all the trimmings from our favorite Mexican food restaurant, Escalantes, and I made cake balls for dessert. It was great to have both of our families here together in our house for the first time. :) We had some left over cake balls so I added a picture of those. I haven't perfected the roundness of them yet, but they were super yummy. I think these are my new favorite dessert :-P

I have been telling my mom for awhile that our back patio is pretty pathetic. The lady who lived here before us left some awesome plants and greenery in the back, but it all died when we had our freezing weather this winter. My mom brought us this pot of "Hens and Chickens."

She also brought us this tree and got in the flower beds and pulled all the dead plants that were out there! Now we need to plant something else out there that is super hard to kill because I have no green thumb!

And this is the other side of our flower beds where she pulled everything out of. There were 2 aloe vera plants they lady left before us. I thought they were dead, but she pulled all the dead plant out and there were new green growths in the bottom so she salvaged them and we have 2 big aloe vera plants again!

So, Sunday was a very good day. I did have to cheat a little bit with the pictures because of the iphone dillema, but hey, you got to see 4 pictures instead of just 1 :)

Day #70 - March 13, 2010 - New shoes :)


John and I had a pretty uneventful weekend, so I decided to take a picture of something I bought last week. Look at these fabulous shoes I picked up from Macy's! I had a VIP 20% off coupon that pretty much worked on everything. I got these shoes to go with the dress from Kohl's I wrote about last week and the new dress I also got that day with the coupon. Unfortunately, I can't find it on their website to show y'all. Oh well, I also picked up these Sperry's I had been eyeing. I got them in the linen/oat and I heart them! I also got John 2 new polo shirts. I always find myself spending way too much money this time of year trying to get all new clothes and accessories for Spring! And, it will just get worse with Spring Break coming and my boredom during the week will set in! :-/

Day #69 - March 12, 2010 - Spring Break is here!


Friday marked the last day of school before 1 week of freedom for Spring Break! :D On the way home from work I stopped in at Charming Charlies to try to find some jewelry for another new dress I bought last week at Macy's. Unfortunately, I found way more than the jewelery needed for the dress. About an hour and a lot of money later I came out with all of this. These are just the necklaces... I got bracelets and earrings to match these and a new clutch. I think I got something to match almost every summer outfit I have!

Day # 68 - March 11, 2010 - Jamaican cowboys


Last night John and I went to Texas Roadhouse for dinner for a good steak and ice cold beverage! John loves how the beer at Texas Roadhouse comes out so cold that there's ice on top! HA! Of course, that is the only reason he chooses to go there :) Not really, they have good steak, but the beer plays a huge factor in it! :D Anyway, this was the drink I got there - The Jamaican Cowboy! It was yummy :-P

Day #67 - March 10, 2010 - Alex Lambert


Well, Wednesday night was spent watching American Idol. And, I wanted to write about this boy and how I really hoped he stayed and how I voted for him, and blah blah blah blah, but last night he got the boot from American Idol. Alex was definitely not the best singer in the competition, but I felt like he had huge potential. And, he is my home town boy! He's from North Richland Hills, Texas, where I spent my first 18 years of life and he's a senior at Richland High School; the school I graduated from in 2002. I thought it would be so fun to see the hometown trips if he made it far enough and actually have someone from "The Hills" on the show! :) Yes, I did actually vote this week, but sorry to say, he didn't get enough. One of the other North Texas boys got the boot last night too; Todrick Hall. We still have 2 left in the mix though; Tim and Casey. I will be rooting for them to represent North Texas!

Day # 66 - March 9, 2010 - Poor dog :(


Hurting, suffering, homeless animals is one of the saddest things to me. Every day when I leave work there are homeless animals wandering all around the streets. I happened to see one yesterday under a car in the parking lot. I thought he was dead at first because his tongue was hanging out and not moving. I talked to it a little bit and it rolled over on its back like in the picture and opened it's eyes. I wanted to pet it so bad but I knew there was no telling what that dog could do to me or what germs it could give me. All the pets wandering around the neighborhood around work really breaks my heart. Most are malnourished, limping, dirty... ugh. It just makes me sad. If I could pick up every stray off the street, I seriously would. When I see those suffering animals on TV, it makes me cry. I really think I missed my calling as a vet or vet tech. But, I am also that weirdo lady at the vet crying when I drop my kitties off! ha.
Please people, take care of your animals and love them like they are a member of your family! Don't get one unless you are ready for the big responsibility of it. If you can't handle them, give them to someone who can love them as much as the animal will love them.
Ok, that's my random venting for today...

Day #65 - March 8, 2010 - BBQ chicken


Another dinner post...
Monday night I made BBQ chicken, roasted broccoli, and rice for dinner. I made this a few weeks ago after seeing a recipe in a cook book and John loved it, so we have added it to our regular menu :) I, however, didn't follow the recipe that we found. Instead, I called up my mom. I remember her always making BBQ chicken growing up and I new she had no fancy recipe. Guess how easy her recipe was? Chicken breasts and BBQ sauce; that's it. All you do is lay the chicken breasts in a baking dish and cover with a whole bottle of BBQ sauce of your choice and cook for 45 minutes to an hour. It soaks up all the BBQ sauce and turns out so moist.
And, because John decided to buy a new rice cooker, we have had rice nearly every night. I was mad that he bought it at first, because really? Did we need a rice cooker? NO! But, I'm glad he did now, because we have really gotten our moneys worth out of it, rice is cheap, and this is seriously the best rice I've ever had. Even better than the chinese take out place we frequent. This thing looks like it's straight out of Japan though. It's really tacky sitting on our counter, but too much of a hassle to put up and get it out every time we use it. And it plays this jazzy little tune when it's finished cooking the rice... ha. Maybe I'll make that contraption my picture of the day soon?! :)

Day #64 - March 7, 2010 - Chocolate pie


Sunday we had dinner with John's family at their house. John's mom asked us to bring over dessert so we picked up this chocolate pie from House of Pies. This is the description from the House of Pies website:
French Silk-A silky smooth combination of dark chocolate layered with the light praline chocolate and gobs of whipped cream.
It was A-MAZING! I'm not a big fan of pie. I will never choose pie over cake if given the option. But, this was darn good! Cheap too - only $11 for the pie. John loves House of Pies. If we decide we are going to get dessert from somewhere this is his first choice. I've tried the cheesecake from there and the Tres Leches and wasn't impressed, but this chocolate pie, delicious!
I had to take a picture because it looked pretty too! :)

Day #63 - March 6, 2010 - Rodeo time!


It's Rodeo time again in Houston! I have been to the Houston rodeo every year since I moved here in 2005 and it can't get any better. It's 10x better than the Ft. Worth Rodeo I talked about in a previous post. The best part, well, I can't just name one "best" part. The food, the concert, the atmosphere... it's always a fun time. Me, John and our friends, Kevin and Summer, headed out to Reliant Park Saturday to take in all the excitement at the Rodeo. We started our day shopping at the exhibits, saw the Pig races, ate BBQ, burritos, and corny dogs, drank beer and margaritas, then made our way into Reliant Arena for the show. I love watching the mutton bustin' and the calf scramble. But, the best part of the actual show is the concert at the end. Saturday's show featured Jason Aldean. Those that know me, know that I am a sucker for all country music so if I could go to every concert, I absolutely would. We picked Jason Aldean because, well, I like him of course, and it was a Saturday. It made it easier instead of going on a work night. My mom and sister are coming in town for Spring Break and we are going to go see Lady Antebellum then and I'm trying to convince John to go see Eli Young Band with me that week as well.
Oh, and check out my boots... that's an obsession with animal prints if I do say so myself! haha.

Day #62 - March 5, 2010 - A new dress


I have nothing exciting to say about Friday... And, no exciting pictures to go along with it either. So, I decided to take a picture of the dress I bought on Thursday at Kohls. I saw it hanging in the women's section and immediately grabbed it to try on. I loved the colors and once I tried it on, I loved the way it fit too. I bought it mainly to wear to the several weddings I have to attend this summer. Kohls had some amazing jewelry too that matched the dress perfectly!

Day #61 - March 4, 2010 - BINGO!


Thursday night we went and played BINGO with some of our friends a local community center. In all the excitement of the game, I forgot to pull my camera out and take some pics so once we got home, I had John take a pic of me with my "dobber" and my card that came close to winning! :) It was a really good time; cheap beer, good food and snacks and good company. I was actually surprised at the turn out of the younger crowd. We went in thinking we would be sitting next to people our grandparents age, but seems like just as many young folks like playing BINGO too! We will have to do this again, soon!

Day #59 - March 2, 2010 - Free gift!


I love Cliniqe's free gift days! The one at Dillards started yesterday, so of course I was there to get everything I needed and my free gift! I wouldn't fuss over this if they didn't have good stuff in it, but they always have stuff I use, plus a cute bag to go along with it! They always have the yellow face lotion and mascara in their bags. I use the yellow lotion every day for my dry face so these are great to have for traveling and in case I run out of the big bottle. I also use Clinique's mascara. I haven't bought mascara in ages because of all the free ones I've gotten over time. It doesn't bother me that sometimes they are different types; I haven't found one I don't like by Clinique. I'm really excited to try the self sun moisturizer they included this time. I majorly need a tan! :D

Day #58 - March 1st, 2010 - School screenings


I finally finished all my vision and hearing screenings yesterday! woo! In the state of Texas, school nurses are required to screen all Pre K, K, 1st, 3rd, 5th, and 7th graders for vision and hearing. I'm in a alternative school with 6th-12th grade so technically I'm only required to screen the 7th graders (which there are only 4 of) but I went ahead and decided to screen everyone. Because I started this job in October and not the beginning of the school year this has taken me forever to get everyone done. Next year I'm thinking I'm going to stick to the required ones unless a teacher sees a need to do the others. I still have 2 other screenings I have to do on some students, spinal and acanthosis. Spinal is to test for scoliosis and acanthosis is a marker on the back of the neck that is linked to diabetes. Those screenings have to be done on my 9th graders. We have 9th graders come in and enroll every day so it's been hard for me to keep up with them, but I am almost finished. I'm ready for Spring Break! Only 8 more school days :)

Day #57 - February 28, 2010 - Temptations


Well, my no sweets thing for lent didn't last too long...
Sunday we headed to Beck's sportatorium with some friends to watch the USA vs. Canada hockey game. Yes, that is a picture of my milk shake and I gave in to. Although, this wasn't the first time I gave in to temptations unfortunately. The girlscout cookies just kept staring me in the face!
I know that it is really bad that I didn't stick with this, but I am blaming in on the fact that I am not Catholic (or any other religion that does this). I grew up Southern Baptist and this is not something that we ever did or even talked about. I think this would be so much easier for me if I truly knew the reasons behind it. I was just trying to do it so John wasn't doing it alone and that is not the right reason. I actually need to understand why I am giving something up and why I can't eat meat on Fridays, which I do not. I have decided that I will convert to Catholicism once John and I are engaged or married and after that I'll make those decisions based on what I have learned about the Catholic Church and the reasons why they do things, like practice lent.
On a less serious note, while we were at the mall, I got some cute new tops and Ann Taylor Loft and a super cute swim suit coverup from Sun and Ski Sports. I can't wait to wear it in Cancun! :) Only 25 more days!

Day #56 - February 27, 2010 - Flip flop weather!


Saturday we finally had flip flop weather! :D John and his friends went to the driving range and right down the street was the nail place I frequent so my friend Maria and I took advantage of that and went and got a mani/pedi! Because the weather is finally starting to turn around and look like Spring, I went ahead and went all out with a bright pink! I got Opi's, I'm Indi-a Mood for Love. I think it might be from one of their new collections because I had never noticed it before at the nail place and it still had the top wrapping on it. We both splurged and got the deluxe pedi and it was A-mazing!
After our mani/pedi, we met the boys at Buffalo Wild Wings where they ventured off to to get some beers after their short trip to the driving range...
John and I made our usual Saturday trip to Costco after that and bought steaks and he made an awesome steak dinner for us Saturday night!
