Fall Blog Challenge - Day 7

So today...

Fall Recipes! 

I'm not really sure what's considered a "fall recipe" but I'll share a soup I love to make for those chilly fall nights :) 



Tortilla Soup! 



30 oz green chili enchilada sauce
                                                                                 32 oz chicken broth
1 can rotel
1.5 lbs boneless skinless chicken breasts
1/2 lb bag frozen corn
1 can black beans (about 15 oz)

Put the 1st 3 ingredients in a large pot and bring to a boil
Add the chicken breast
Cook until chicken is done and then shred
Add shredded chicken, corn and beans to broth
Cook for another 10-15 minutes

Enjoy! :-P
