Bubble Up Enchiladas

Another Pinterest recipe for y'all! 

A few weeks ago I tried the Bubble Up Enchiladas from Pinterest...


The original recipe came from here.

Here's what you'll need: 

1lb ground turkey
1 (10 oz) can enchilada sauce
1 (8oz) can tomato sauce
1 can reduced fat refrigerated biscuits
1 1/4 cups shredded low fat Mexican cheese

And here's what you do: 

Preheat oven to 350 degrees. Brown turkey and drain if needed. Mix in a can of enchilada sauce. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
You can make this into 6 or 8 servings



A few little extra notes: 


This is a weight watchers recipe - hence why it calls for everything reduced fat. You can use ground beef, regular biscuits, and regular cheese if you feel like it :)
I used half the can of tomato sauce just because I hate tomato-y stuff. It tasted great!

Overall, a great easy recipe we will definitely make again. 
And it was even better left over which is great because it made so many servings.

Making this now. Mine won't be as good bc I only had a small can of biscuits but they were grands so we will see.
