Wedding Wednesday - 2 Weeks!

We leave for Mexico 2 weeks from tomorrow!! 

Here's my agenda for the next 15 days....

-Email the bridal party with details of things to remember to bring with them to Mexico and things to know while we're in Mexico.

-Have dinner with our groomsmen to give them their gifts

-Figure out how we're getting to the airport. I think we're getting a limo :)

-Email all the guests last minute details about the trip

-Go for my last fitting and then pick up my dress

-Meet with the priest at the church

-Get married at the church!

-Print pictures of specific things I want in Mexico... hair, makeup, bouquets, etc.

 -Get all the suitcases packed, finalized and ready to go.

That last one is my biggest headache and biggest "to-do" right now. I have to:
wrap all the breakables in bubble wrap
Make sure each person only has $300 of stuff or less
 Make sure not to exceed 50 lbs in each suitcase
Make copies of all the receipts and make sure each person has a copy if the item is in their suitcase
Have everything ready by the 8th so my mom can take home stuff to pack in their suitcases
Make sure John and I both have 9 days worth of clothes
Make sure not to forget anything extremely important like my wedding shoes or jewelry! 

Ok that stresses me out just writing it out!

But we're almost there and almost done and we're almost MARRIED!!

Crockpot Pork Tenderloin

This was the original pin where I found the recipe...

-About 2lbs of Pork Tenderloin
-1/4 cup soy sauce
-1T yellow mustard
-2-3 T pancake syrup
-2T olive oil
-2T diced dried onions
-1.5 t garlic salt

1. Put everything in the crockpot and cook on low for 6 hours. 

So easy and SO delicious!! This is one of our new favorite recipes and have already made it twice! Unfortunately, my phone reset and I lost all my pictures that I took when I made it but I was able to find one that I posted on instagram of the one we made. 

We added some homemade mashed potatoes with it and the extra gravy in the bottom of the crockpot goes great on top!

This Weekend I...

This Weekend I...

...Got 30 bubbakegs in the mail to take to Mexico!

...Started seriously packing for the trip... 4 suitcases and only one of them has clothes in it. This could be a problem!

...Had kitty snuggles 

...Went to my second dress fitting with my mom and sister! a manicure and pedicure

...celebrated my bachelorette party (another post to come on that!)

...Went to Whataburger to cure a hangover

...had more kitty snuggles while we waited for dad to get home from Nola.

Wedding Wednesday - 1 Month!

1 month from yesterday we're leaving for Mexico.

1 month from this Saturday, I'll be walking down the aisle.

33 days y'all. 


I am pretty much DONE!

I have a small to-do list so I'll share that with y'all...

1. Finish up groomsmen and parents gifts - These are all ordered, we just need to do final touches and wrapping.

2. Pack - I've already started! All my swimsuits, cover ups and summer dresses are in the suitcase!

3. Organize everything we're taking with us, decoration wise - We can only have $300 per person to take in to Mexico so I've started a spreadsheet with how much everything was. It's helping me decide what we need to pack with us and what we need to hand off to parents and the wedding party to get it there without having to pay taxes going through customs.

4. Marriage License - We're planning on doing this the day before Thanksgiving since I'm off work

5. Finalize ceremony/reception music - I am having the damnedest time picking music for the ceremony and introductions at the reception. If I could see how long the "aisle" is and where we will be starting from, it would help, but like everything else, this is one of the unknowns that goes along with a destination wedding.

6. Email all the guests with final last minute itinerary and changes - Our resort has a strict dress code in the restaurants so I want to email everyone to make sure they bring appropriate clothes. We also decided to use a different type of videography service where people can video using their iphones so I want to ask everyone to download the app so we can have as many videos as possible. (I'll share more about that in a later post!). And of course send a last thank you to everyone for make the trip to Mexico before we get there.

7. Celebrate our bachelor/bachelorette parties - Both of them are this weekend! John is going to New Orleans with his 3 closest friends and I will be celebrating here in Houston!

8. Stop and enjoy this last month of being engaged and a Bride - ahh, this year has flown by. I've enjoyed being engaged so much and planning this wedding so I want to make sure I take time to stop and enjoy this last month. Of course I'm going to love being Mrs. Ryan and married to my best friend, but there is just something about being the Bride that is special :)

Of course there are a few other things here and there to finalize, but these are the big things on our list! I seriously can't believe we're so close. So ready to be in Mexico on the beach with my new husband and all of our family and friends!

This Weekend I...

This Weekend I...

...Went shopping in search of a dress to wear to the bachelorette party and came out empty handed. Spent 3 hours in the mall and came home with ZERO bags! Hate when that happens!

...Had to use this Dawn soap to give Lucy a bath. She jumped in bed with us Saturday morning and smelled awfully good. Turns out she had fun playing in the Scentsy over night! I called the vet and they said to try using Dawn soap to get it out. She was not a happy camper! We found her in bed after her bath! haha

...Watched the Tech game at our house complete with mimosas, donuts and kolaches since it was an early game!

...Went to the nutcracker market! This sorta helped my lack of Christmas spirit but I'm still not quite there yet. We got our yearly ornament and it finally says "The Ryan Family!" I also got some jewelry and a few other Christmas presents.

...Wore my new kitty cat necklace!

...Got some more wedding presents! 

...realized I only have 18 more days of work until the wedding... WOW!!!

Mexican Pizza

Weight Watchers Friendly Mexican Pizza! 

Here's the original pin


3.25oz 95% lean ground beef
2t reduced sodium taco seasoning
Boboli 12" Whole Wheat Thin Pizza Crust
1/2 cup chunky salsa
2T taco sauce
1/3 c canned black beans, drained and rinsed
3/4 c reduced fat shredded cheddar cheese
4 medium black olives, chopped
1 medium scallion, chopped


1. Preheat oven to 450 degrees

2. In a large skillet, brown the ground beef over medium-high heat. Add taco seasoning and stir to evenly combine

3. In a small bowl, combine the salsa and taco sauce and stir together. Spread the mixture evenly across the surface of the pizza crust, leaving at least a ½ inch edge around the outside. Sprinkle the black beans across the top of the salsa layer and then follow with the reserved taco meat. Sprinkle the cheese evenly across the top and then follow with the sliced olives.

4. Place pizza on a foil covered baking sheet, a pre-heated pizza stone (my preference) or straight onto the oven rack (depending on how you like your crust) and bake for 8-10 minutes. Remove from the oven, slice and sprinkle the chopped scallions over the top.

Yields 6 slices. Weight Watchers Points Plus: 5 per slice (P+ calculated using the recipe builder on
Nutrition Information per slice from 206 calories, 28 g carbs, 5 g fat, 11 g protein, 5 g fiber

Special notes from me:

-We cooked a whole pound of ground beef just because that's easier. Which also means we used a whole packet of taco seasoning. We ended up putting more meat on the pizza :)
-I bought a can of already sliced black olives and just filled the pizza up with those. I love black olives!
-I used cilantro instead of green onions. I love me some cilantro!

This recipe was excellent and super easy! We already bought the stuff at the grocery store to make it again!

These were from this weekend. We went back to Hefley's for the Tech vs. UT game. It was a lot of fun even though Tech lost and it poured down rain on us!
